Lemon Bread

My grandma used to make lemon bread in the spring and summer when I was a kid, and it was one of my favorite things! This delicious bread gets topped with a sugary lemon glaze making it sweet enough to be a treat, but it’s still bread, so breakfast is also an option! Hope you enjoy it as much as I do!

Ingredients:

Bread:

  • 1/2 cup softened butter
  • 1 cup white sugar
  • 2 eggs
  • Zest of 1 lemon – about 2 tsp
  • 1½ cups flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk

Glaze:

  • 2 tbsps lemon juice (fresh squeezed of you can)
  • 2 tbsps powdered sugar

Instructions:

  • Preheat oven to 350 degrees and butter & flour a bread pan
  • In a large mixing bowl, cream together the butter, eggs, and sugar
  • In a smaller bowl, soft together dry ingredients: flour, salt, and baking powder
  • Add the dry mix to the butter/egg/sugar mix folding to mix, then add in the milk and lemon zest
  • Once combined, pour mixture into baking pan and bake for 50-60 minutes. (Use a toothpick to test: if it comes out clean you’re all set!)
  • While bread bakes, mix glaze ingredients: lemon juice and sugar until combined and smooth
  • When bread is finished baking, leave in pan and poke holes (I used a chopstick) around halfway down the loaf all throughout the bread
  • Pour glaze to cover the entire loaf
  • Let bread sit to cool in pan for another 10 minutes then remove and enjoy!
