My grandma used to make lemon bread in the spring and summer when I was a kid, and it was one of my favorite things! This delicious bread gets topped with a sugary lemon glaze making it sweet enough to be a treat, but it’s still bread, so breakfast is also an option! Hope you enjoy it as much as I do!

Ingredients:
Bread:
- 1/2 cup softened butter
- 1 cup white sugar
- 2 eggs
- Zest of 1 lemon – about 2 tsp
- 1½ cups flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
Glaze:
- 2 tbsps lemon juice (fresh squeezed of you can)
- 2 tbsps powdered sugar
Instructions:
- Preheat oven to 350 degrees and butter & flour a bread pan
- In a large mixing bowl, cream together the butter, eggs, and sugar
- In a smaller bowl, soft together dry ingredients: flour, salt, and baking powder
- Add the dry mix to the butter/egg/sugar mix folding to mix, then add in the milk and lemon zest
- Once combined, pour mixture into baking pan and bake for 50-60 minutes. (Use a toothpick to test: if it comes out clean you’re all set!)
- While bread bakes, mix glaze ingredients: lemon juice and sugar until combined and smooth
- When bread is finished baking, leave in pan and poke holes (I used a chopstick) around halfway down the loaf all throughout the bread
- Pour glaze to cover the entire loaf
- Let bread sit to cool in pan for another 10 minutes then remove and enjoy!
