A quick and easy recipe for great weeknight dinners or to-go lunches! The best part of this recipe is that it’s really an open platform. It provides a great Thai-inspired noodle base that you can customize with whatever veggies, toppings, or add-ons you’d like, as well as adjusting the spice level to match your taste!
Ingredients:
- 1 lb rice noodles (or any long pasta of choice: linguine, fettuccine, spaghetti)
- 1/2 – 1 1/2 tbsp red pepper flakes (amount depends on how spicy you want it)
- 1 tsp minced garlic
- 2 tbsp olive oil
- 2 tsp chili sauce
- 6 tbsp soy sauce
- 4 tbsp honey
- Scallions, onions, carrots, peanuts, cilantro, Sriracha, sesame seeds, cabbage, etc. for additions or garnishes
Instructions:
- Chop/prepare garnishes and set aside
- Boil water and prepare noodles according to package
- While pasta is boiling, heat oil in a large skillet; add red pepper flakes and garlic
- If adding carrots, onions, or cabbage; sauté in a pan on the side or add to pan with pepper flakes and garlic.
- Once oil is hot and pepper flakes and garlic are fragrant, add the chili sauce, soy sauce, and honey; whisk together
- Toss pasta in the skillet with the sauce.
- Can be served hot, room temperature or cold. Top with garnishes and enjoy!
