Lemon Crinkle Cookies

These cookies are a simple way to bring a bright flavor to your day! If you’ve followed my Instagram page, you’ve seen the Loopy for Lemons phase I’m going through during this quarantine! One of the many sweet lemon recipes bringing some sunshine inside during this stay-at-home period!

Ingredients:

  • 1 lemon boxed cake mix, 15.25 oz
  • 6 tablespoons unsalted butter, melted
  • 2 large eggs
  • 3/4 teaspoon lemon extract
  • 1/4 cup granulated sugar
  • 2/3 cup powdered sugar

Directions:

  1. Preheat oven to 375 degrees.
  2. In a large bowl add the boxed cake mix, melted butter, eggs, and lemon extract; mix until combined.
  3. Place granulated sugar and powdered sugar in separate separate bowls. Scoop dough into tablespoon-sized balls and drop into granulated sugar, rolling to coat. Repeat with powdered sugar and place on baking sheet.
  4. Bake cookies 9-11 minutes, until puffed and cracked on the top. (The cookies will look doughy between cracks thats the goal!).
  5. Allow cookies to cool on baking sheet for 5 minutes, thentransfer to a wire rack or tea towel to cool completely. Enjoy!
